[Feature Request] Upgrade mock-server to use new Jackson 3.x APIs. #1970

Describe the feature request
The latest mock-server (5.15.0) uses Jackson 2.x whose package declarations are different from the new Jackson 3.x. Hence looking for a mock-server version that utilizes the new Jackson API packages.
What you are trying to do
I have a small simulator which I upgraded to Jackson 3.x and Spring 7.x. But when starting the server I keep getting the error:
java.lang.ClassNotFoundException: com.fasterxml.jackson.databind.JsonSerializer
The solution you'd like
It would be great if mock-server dependency comes with Jackson 3.x out-of-the-box, in the next release. It would be of great help.
Describe alternatives you've considered
Cant think of any alternatives. Jackson has sginificantly prevented backward compatilbity.
