Add stats tracking on pacote.extract through extractAndResolve

Using the new class [StatsCollector(https://github.com/NodeSecure/scanner/blob/master/workspaces/scanner/src/class/StatsCollector.class.ts) collect stats on pacote.extract.

We could do it in two steps:

• In taball refactor extractAndResolve to use dependency injection to allow us to pass pacote in the option parameter.
• In scanner inject the tracked pacote.extract function.
